I am picky about what we eat in our home. My kids don’t react well to high fructose corn syrup and artificial food coloring. I have to get creative sometimes to give my kids the same fun treats their friends enjoy. In the heat of the summer we love to make slushies, and this is one of our favorite recipes.
It is two simple ingredients; papaya and Pomwonderful pomegranate juice.
Cut the papaya in half the long way. Scoop out all the seeds. I let me kids play with the seeds for a bit because they are squishy, and fun. Otherwise, just throw out the seeds. Scoop the fruit, and juice into your food processor or blender. Process until smooth. Spoon the papaya into a freezer tray (ice-cube tray or baby food freezer container), and allow the papaya to freeze for at least three to four hours. It will last for months in the freezer, so I like to make a large batch and use it throughout the summer.
Once the papaya is frozen and ready, use a fork to break up the frozen chunk or chunks into a crushed ice consistency. Add a splash or more of pomegranate juice and mix it up. Serve, and Enjoy!
