Greek Chicken Bowl

I love to make this dish for the family! The kids do really well with this recipe on pitas. I give them a lemon wedge to squeeze onto their dinner because somehow that is a magic trick to makes kids eat better. This is one of my favorite meals to have leftovers so I can put them into ready to go lunch bowls for the week.

  • Chicken
    • Mix ingredients into a baking dish ↓
    • 3 chicken breasts
    • 1/4 cup water
    • 2 cloves garlic minced (fresh is best, but use dried if that’s what you have)
    • 1/2 fresh lemon squeezed
    • season with sea salt, pepper, and oregano
    • bake at 400 for 20 minutes
    • shred
    • allow it to cool
  • Tzatziki Sauce
    • Mix ingredients in large dish ↓
    • 1 cup plain greek yogurt
    • 1/2 Tbsp dill
    • 1/4 fresh lemon squeezed
    • 1 clove garlic minced
    • 1/2 Tbsp olive oil
    • sea salt
  • Chop and add veggies to large dish, and mix everything into the sauce
    • 1 cucumber/ 4 mini cucumbers diced
    • 1 cup grape tomatoes halved
    • 1 cup fresh spinach
    • 1/4 cup kalamata olives halved
  • Once chicken has been shredded and is cooled, mix it into the sauce and veggies.
  • Optional: Mix in 1 cup cooked quinoa or serve on pita
