Chicken and Broccoli Stir-Fry

This dish is delicious and makes the best leftovers. We enjoy this for dinner and put the leftovers in small bowls to grab for lunches throughout the week.

  •  Chicken
    • 4 Chicken Breasts cut into bite sized pieces
    • Mix 2 Tbsp Cornstarch & 2 Tbsp Water
    • Combine liquid and chicken in a large skillet or grill pan
    • Cook on medium heat until chicken is cooked thoroughly and browned
    • Season with Black Pepper and Sesame Seeds
    • Set chicken aside
  •  Sauce
    • Mix ingredients ↓ & set aside
    • 1 Tbsp Cornstarch
    • 1 Tbsp Sesame Seed Oil
    • 1/2 Cup Soy Sauce
    • 2 Cloves Fresh Minced Garlic
    • 3 Tbsp Brown Sugar
  • White or Brown Rice
    • Cook 1.5 Cups of Rice
    • Cook in Chicken, Beef, or Vegetable Broth for more flavor
    • Set aside
  • In a large saute pan combine ingredients ↓
    • 1 Tbsp Vegetable Oil
    • 3 Tbsp Water
    • Broccoli (1 head chopped)
    • 1 Carrot chopped
    • 1 Can Water-chestnuts
    • 1/2 Sweet Onion chopped
    • Bring to high heat
    • Cover
    • Cook for 3 minutes
  • Add Chicken, Rice, and Sauce
    • Stir everything together
    • Lower heat to medium
    • Cook for 4 minutes covered
