Creamy Ranch Chicken Soft Tacos

It’s Taco Tuesday again, and this week we are making one of our favorite recipes! It is easy and delicious. We got so excited to eat them tonight that I forgot to take a picture for this post. Oops!

Here is the Recipe for Creamy Ranch Chicken Soft Tacos:

  • 5 Chicken Breasts
  • 1 Fiesta Ranch Packet
  • 1 Avocado
  • 1/2 Fresh Squeezed Lime
  • Plain Greek Yogurt (I use the small containers of Chobani which are 5.3oz, but you can do 3/4 cup if you have a larger container at home.)
  • Flour Tortilla Shells
  • And Top with Whatever You Like (Have fun and be creative with it!)
    • Sour Cream
    • Lettuce
    • Avocado
    • Cheese
    • Onion
    • Pico
    • Salsa
    • Guacamole
    • Black Beans
    • Corn
    • Lime Wedges

Chicken Breast

Place 5 chicken breasts on the rack in your Instant Pot with water below. There is no need to season the chicken yet. Pressure cook on high for 8 minutes. Shred. If you do not have an Instant Pot, you can bake chicken in the oven.

Sauce

In a Saute Pan mix together Greek yogurt, fiesta ranch packet, avocado, lime juice, and shredded chicken. I’ve learned that a ripe avocado works best for this recipe because it mashes to become part of the sauce easier. Saute on Medium-High heat for about 5 minutes. Stir often to avoid sticking. (You can use the Saute function on your Instant Pot if you prefer to do everything in one place.)

Build Your Perfect Taco

If you have children, let them make or choose ingredients for their own taco. My kids eat so much better when they feel they have freedom to make decisions on their meal. I swear by giving them fresh lime wedges to squeeze on their tacos. It is like magic juice that makes them want to eat!

*Tip; this is delicious for rice bowls and taco salads too! Make extra and use it for lunches throughout the week.
